As the largest property in the Spicers complement, the retreat will open with 49 luxuriously appointed rooms, state of the art conference facilities, an events gazebo and a new outdoor pool. A private dining room within the restaurant and bar, will also feature a wine wall for local wine makers to house their favourite drop. The Spicers design team have created a classic yet textural look and feel, drawing upon the natural colour scheme of the Hunter region as inspiration.
Focused on seasonality and freshness, the menu at Eremo will be modern Italian, yet regionally distinctive in style. The restaurant will be open even days per week, for breakfast lunch and dinner for onsite guests and external customers.
